Double chocolate pudding

Every once in a while, it’s nice to have a very chocolately dessert that doesn’t involve doing any baking. I happened on this recipe while I was at a friends house. They offered me full use of their kitchen and ingredients, and while that really opened the world to me, I’m lazy and wanted chocolate. So I found a recipe.  I never used to like chocolate pudding, but this is the best. Topped with homemade whipped cream makes it superb, and it really doesn’t take that long.


2 C milk (I did partially cream, partially 2 percent)

1/2 C sugar

1/3 C cocoa powder

3 tbsp cornstarch

2 egg yolks

2 tsp vanilla

1/4 tsp salt (not kosher salt)

1/2 C semisweet chocolate chips

1 C heavy cream

Take 1.5 C of milk, sugar, and powdered cocoa and heat over medium heat. Wait until ingredients are almost at boil and then take off heat. While this is going on, take rest of milk, eggs, cornstarch, vanilla, salt and mix together. Mix this mixture into hot milk/cocoa. Put pan back on stove and cook until almost at a boil, and then turn down to low and stir for about two more minutes. Pour mixture into bowl and let cool slightly. Take 1/4 of the heavy cream and put into a microwave safe bowl with chocolate chips. Microwave for 30 seconds or until chocolate is melty, and then stir together until you have a thick chocolate mixture. Pour this into the other bowl and mix thoroughly. Pour this into four individual little bowls for chilling. Doing this individual ensures that it will chill properly without going bag. Whip rest of cream before eating, sweeten with a little sugar and some vanilla. Top pudding with cream and enjoy!
