Oodles of noodles
The boo and I were celebrating an anniversary a few nights ago, and we decided to make our own feast instead of going out. One of our entrees was a bowl of wonderful homemade egg noodles (which we then topped with homemade sauce and meatballs. He made those, so I’m not posting).
2.5 C flour. We split this half plain flour, half semolina
1/4 C water
1/8 tsp salt
Get a big bowl. Pour flour in. Beat eggs in separate bowl. Add water and salt to eggs. Make what looks like a volcano inside the flour, and pour the liquids into the crater. With a fork, gradually beat eggs into flour. When it becomes too hard for a fork, use your hands, and prepare to get messy! Knead and incorporate until ALL flour has been collected by the dough. Make the dough into a ball, and put onto a clean, well-floured countertop. Roll out flat to desired noodle thickness, and cut into noodle shapes of your pleasing. Good served with sauce, although I tend to like it with some hot butter with mashed garlic.
