Blueberry muffins

Tomorrow is my day to make brunch for the house. Because there are seven of us, and I know how I function in the morning, I decided to do the baking part of it today, with a double batch of blueberry muffins. The recipe is courtesy of good ole’ Betty, so anyone should be able to make it.


1/5 C flour

1/2 C sugar

1 egg

1/2 C milk

1/4 C vegetable oil

2 tsp baking powder

1 tsp salt

3/4 C frozen blueberries, defrosted

Preheat oven to 400°, or slightly less if your oven runs hot, like mine does. Grease a 12 cup muffin pan. Beat egg with milk and oil. Stir in blueberries. Blend all other ingredients, but only until all flour is incorporated. Don’t worry about the lumps. Spoon into muffin pan, filling each one just over halfway. Bake for about 20 minutes, or until tops are golden and the middle is cooked. Remove from pan immediately. Eat!
