Zesty lemon bars

I should begin by saying I do not like lemon bars, at all. However, I love cooking for other people. A is moving to Oregon, and she had a dessert potluck tonight. My work schedule doesn’t let me do things like that, but I was able to make these bars — at her request — to send in my absence. Word has it that she enjoyed them, and I had fun making them even if it’s not my type of treat.

1 C flour

1/2 C butter, softened

1/4 C powdered sugar

1 C granulated sugar

2 tsp grated lemon peel

2 tbsp lemon juice

1/2 tsp baking powder

1/4 tsp salt

2 eggs

Preheat oven to 350°. Mix flour, butter, and powdered sugar to create dough. Pat into 8 by 8 pan, letting the dough go up the sides about an inch.  Bake 15 minutes. Put all other ingredients into mixer. Beat until light and fluffy, about three minutes. Pour into crust while crust is still warm, bake again for 25 to 35 minutes. In my oven, the top browned way before the rest was done, and I had to put a loose sheet of foil over it to prevent burning. The bars will be done when the middle is firm and a light indent leaves no mark. Let cool, dust with powdered sugar, and cut into squares.
