Seattle has decided that since the 4th of July has passed, it’s time to get summery. In celebration, we’re eating outside today, and dad and I are collaborating on dinner. My contribution: this strawberry and spinach salad. Not only is it tasty, but it requires no real cooking at all and is the easiest thing ever.
3 tbsp olive oil
2 tbsp balsamic vinegar
salt and pepper to taste
Wash spinach. I didn’t give a quantity, because when I made this I just loosely filled my salad bowl. Add bowlful of strawberries, washed and sliced. Mix salt and pepper with olive oil. Drizzle and toss. Add balsamic vinegar, toss. Eat!
