Lazy daisy cake with blueberries

My dad used to make this cake a lot when I was little, because it’s really easy to make. While it takes about thirty minutes to bake, it’s fast to make from scratch, and you probably have all the ingredients on hand. It’s also not super sweet, and in my opinion is served best with some whipped cream and some kind of fruit, today blueberries. All told, it’s a really nice desert to a filling meal.


2 eggs
1 C sugar
1 tsp vanilla
1 C flour
1/4 tsp salt
1 tsp baking powder
1/2 C milk
1 tablespoon butter, melted
Preheat oven to 350°. Grease a 9 by 9 baking pan. Whisk eggs thoroughly. Beat in sugar until thick, add vanilla. Heat milk until warm and with butter, mix into the egg mixture. Stir in all other ingredients until just mixed and pour into pan. Pop into oven for thirty minutes, or until top is golden and a toothpick comes out clean. Serve warm.
