This meal doesn’t require any cooking, but it does score high points on the delicious front. It’s so basic: good baguette or other bread, sliced fresh mozzarella, fresh basil, sliced tomato, olive oil, salt and pepper. I was lucky that we had the basil on a plant in the living room. The seasonality of the ingredients is one of the reasons that this makes a great summer dish. The construction is simple — drizzle the baguette with some oil, add a tomato slice, salt and pepper to taste, and stack on the mozzarella and the basil. Possibly the easiest (and tastiest!) dinner option there is.
