24 carrot salad
For my first dinner back home, I got the chance to cook (and to go grocery shopping at a place with a fantastic selection). I think I’ll post about the entrée later, but for now I’m going to write about the carrot salad.
This isn’t the first time I’ve made this salad, because it’s one of my favorites. It also calls for ingredients that I have on hand all the time, which is great.
2 carrots (this can easily be more, but it’s a nice amount for a side dish).
a few sprigs fresh parsley, chopped
1/2 tsp cumin or to taste
1 tbsp fresh lemon juice
1 tbsp olive oil
Grate carrots. Mix with lemon juice, oil, and cumin. Sprinkle parsley over the top.
